Ok, I'm watching lots of videos during January intensive because i need an escape. Well, this video is a great escape- so creative!

Last night after evening zazen i snuck out my CD player and put on a CD my best friend gave me for Christmas. I hadn't listened to it yet. I found the track simple man and sunk into it. I wanted everyone in the world to listen to this song. So, maybe if I post it here 3 or more people who I know will listen!

Good News! Vegan Cashew Cheese

I thought I'd post a recipe since, well, why not?

Cashew Cheese to Die For:
4-5 cloves of garlic, minced
Juice of 1 lemon
2 tsp sea salt
1 C. water
3 C raw cashews or macadamia nuts

Mince the garlic in the blender, then add the remaining ingredients in the order listed and blend until smooth. Add more water if necessary, but you want the mixture to be thick and creamy.

Apparently this recipe is mind blowing. I'm excited to try it.

From the Veganomicon by Isa Moskowitz & Terry Romero
1/2 cup raw cashew pieces (approximately 4 ounces)
1/4 cup fresh lemon juice
2 cloves fresh or roasted garlic
1 pound firm tofu, drained and crumbled
1 1/2 teaspoons dried basil
1 1/2 teaspoons salt

In a food processor, blend together the cashews, lemon juice, olive oil, and garlic until a thick creamy paste forms. Add the crumbled tofu to the food processor, working in two or more batches if necessary, until the mixture is thick and well blended. Blend in the basil and salt.

This is awesome for stuffed shells.

Aged Cashew Cheese is also sold at Rainbow Grocery under the name "Dr Cow" but it is really expensive.
